Snorkelling and scuba diving fins enhance how you move through the water. A lot of research goes into trying to mimmick the natural world in terms of how the fins (sometimes referred to as flippers) move with each thrust.
The different channels down the length of the fin, the weight of the materials, the hinges, vent technology and straps really do make all the difference, which is why there is often such a difference in pricing from fin-to-fin.
Freediving fins are much longer. They will let you glide through utilising less energy.
Open Heel fins are better for open water diving as they are more adjustbale and can be worn with dive-boots as there is more room to get your foot in and out when wearing neoprene boots.
Full Foot fins are better suited to snorkelling as they are lighter and often faster to slip on and off as neoprene boots won't be used with snorkel fins.
